Unleavened bread (matze)

Mango bread

 
  • 250 GRAM WHOLEMEAL FLOUR
  • 1 TSP SALT
  • 1.5 DECILITER WARM WATER
  • 400 GRAM FLOUR
  • 1 TSP YEAST
  • 1 TSP SALT
  • 2 MANGOES, peeled and cut
  • 100 GRAM SUGAR
  • 100 GRAM ALMONDS, chopped
  • 3 EGGS

Mix all ingredients and knead for a few minutes. Leave the dough for at least half an hour. Take small piece, the size of an egg, roll into a ball and roll them out as thin as possible. Put them under the hot grill, about 2 minutes per side, but watch them closely.

Mix all ingredients, add 1 1/2 dl water and knead for ten minutes. Put the bread in a loaf pan and let it rise for one and a half hour. Bake 30 minutes at 180 degrees Celsius.
