Peanut wafers

 

Hoi sin pork

 
  • 200 GRAM PEANUTS, peeled
  • 100 GRAM RICE FLOUR
  • 100 GRAM FLOUR
  • 1/4 LITER COCONUT MILK
  • 1/2 TSP TURMERIC
  • 2 CLOVES GARLIC, mashed
  • 1 TSP CORIANDER POWDER
 
  • 600 GRAM PORK LOIN, in cubes
  • 1 ONION, sliced
  • 2 RED PEPPERS, chopped
  • PIECE OF GINGERROOT, grated
  • 2 CLOVES GARLIC, chopped
  • 1/2 CAN BABY CORN
  • 6 TBSP HOI SIN SAUCE
  • 2 TBSP SOY SAUCE
  • 1 TBSP VINEGAR

Mix all ingredients well. Heat oil in a wok. Put 3-4 tablespoons of batter at a time in the hot oil and deep-fry one minute, turn the wafers around and deep-fry another minute, or until golden brown. Sprinkle with salt.

Stir-fry the onion, garlic, peppers and gingerroot for 3 minutes. Add the pork and stir-fry 5 minutes more. Add the rest of the ingredients and heat for 2 minutes. Serve with rice or noodles.
