Krakelingen

  • 250 GRAM FLOUR
  • 100 GRAM BUTTER, melted
  • 1/2 CUP MILK
  • 100 GRAM SUGAR
  • 1/2 TSP CINNAMON
  • 1/2 TSP SALT
  • 1/2 TSP YEAST
 
  • 200 GRAM CORN FLOUR
  • 50 GRAM RAISINS
  • 50 GRAM DRIED FIGS, chopped
  • 50 GRAM ALMONDS, chopped
  • 50 GRAM PINE NUTS
  • 100 GRAM SUGAR
  • 2 TBSP OLIVE OIL

Mix flour, butter, salt, milk (keep a few tablespoons behind), cinnamon, salt and yeast and knead 10 minutes. Allow the dough to rise for one hour and roll it out to a rectangle with a length of 50 centimeters. Cut in strips of 1 centimeters width. Brush them with milk and sprinkle with sugar on both sides and fold them into krakelingen (like pretzels, see picture). Allow them to rise half an hour more and bake 20 minutes at 200 degrees Celsius.

Mix the flour with the sugar and olive oil and enough warm water to make a smooth dough. Add the nuts, the raisins and the figs and knead for a minute or so. Form 20 cookies and bake these 20 minutes in the oven at 150 degrees Celsius.
