Peanut cookies  

Palmiers

 
  • 50 GRAM CORN FLOUR
  • 1 EGG
  • 4 TBSP SUGAR
  • 100 GRAM PEANUTS, chopped
  • 1 TBSP OIL
 
Whisk the oil with the sugar and the egg and 1 tablespoon water. Add the peanuts and the flour and stir all together. Make small heaps on a greased baking tray and bake the cookies 15 minutes at 170 degrees Celsius.

I was inspired by Esthers African recipes, who, at her turn, was inspired by the book "A taste of Africa" by Tebereh Inquai.

Malawi celebrates Hastings Banda's official birthday (14 May 1906), his real birthday is unknown. He was involved in the independence of British  Nyasaland, and named it "Malawi". Click on culinary calendar for more links between cooking and history.

Roll the pastry out to a large rectangle. Brush it with water and distribute the sugar and cinnamon over it. Roll the rectangle op from both sides; cut the roll in slices. Arrange the slices on a greased baking tray and bake the palmiers for 20 minutes at 200 degrees Celsius.

The origin of palmiers (French for "palm tree") is unclear; the name refers to their shape. For the same reason, the Germans call them "Schweineoren" and the British "pig's ears"; some call them "elephant's ears".
