Stir fry
the shallots, garlic and chili for three minutes. Add prawn paste and sugar
and stir fry two minutes more. Add the tomatoes and stir fry until they are
soft. Add the rest of the ingredients and grind in the food processor or
with mortar and pestle.
Fry the onion three minutes. Add the
mushroom and fry two minutes more. Add the stock and the spinach and
salt and pepper to taste and cook 2 minutes. Puree in a food processor and
stir in the cream. Serve with fish or
fresh pasta.
