Red cabbage with red currant jam

 

Lefse

 
  • 500 GRAM POTATOES, peeled and cooked
  • 50 GRAM SOFT BUTTER
  • 1/2 CUP CREAM
  • 1 CUP FLOUR

Heat a little oil in a pan and stir fry the apple with the sugar 3 minutes. Add the cabbage and stir fry 2 minutes more. Add the cinnamon, vinegar and 1/2 cup of water and bring to the boil. Close the pan and simmer for half an hour. Finally, add the red currant jam, stir and heat half a minute more.

Puree the potatoes with the butter and cream and salt and pepper to taste. Add the flour and knead to a dough. If it is too wet, add some flour. Divide the dough into 10 balls and roll these out to flat pancakes. Heat a little oil in a frying pan and fry the pancakes on medium heat one minute per side.

In Norway, they have special lefse pans, which are a kind of griddle. In these pans, you can fry your lefse without using oil.
