Carrot salad Bean salad
  • 500 GRAM CARROTS
  • 2 APPLES
  • 100 GRAM DATES
  • 50 GRAM GRATED COCONUT
  • 1 DECILITER CREAM
  • 4 TBSP MAYONNAISE
  • 1 CAN WHITE BEANS
  • 1 CAN KIDNEY BEANS
  • 1 TBSP OREGANO
  • 1 ONION, chopped
  • 2 CLOVES GARLIC, crushed
  • 2 TBSP GOOD VINEGAR
  • 2 TBSP OLIVE OIL
Grate the carrot and the apple. Take the stones out of the dates and cut them in pieces. Mix all the ingredients and add fresh milled pepper and salt. You can vary the ingredients for instance by using raisins instead of dates and pears or other sweet fruit instead of apples. 

Mix all the ingredients, toss and wait for 10 minutes before eating.

Serving suggestions:
Serve with
French bread or Sour dough bread and Potatoes boulangere, and if you are an non-vegetarian, a large piece of beef fillet. A bottle of Merlot will fit in very well.
The salad is also good as part of a salad buffet.
