Coconut beans Sweet and sour vegetables
  • 500 GRAM FRENCH BEANS, chopped
  • 1 TSP CURRY
  • 1 RED CHILLI, chopped
  • 1 GREEN CHILLI, chopped
  • 2 ONIONS, chopped
  • 1/4 FRESH COCONUT, grated
  • 500 GRAM GREEN BEANS, cut
  • 250 GRAM BROCCOLI, in small pieces
  • 2 GREEN SWEET PEPPERS, cut
  • 1 CUCUMBER, in cubes
  • 2 CL GARLIC, chopped
  • 2 RED CHILLIES, chopped
  • 2 TBSP VINEGAR
  • 1 TBSP SOY SAUCE
  • 1 TBSP SUGAR

Boil the beans until they are done.  Fry the two kinds of chilli for 3 minutes, add the onion and fry 5 minutes more. Add the curry. Mix this with the beans, put on a plate and sprinkle the coconut on top.

Stir fry garlic and chillies for three minutes. Add sweet peppers and beans and fry 5 minutes; add broccoli and fry 5 minutes more. Finally, add cucumber, vinegar, soy sauce and sugar and heat for 5 minutes.
