Bananas and peanuts

 

Apple potato cake

  • 6 BANANAS, peeled and sliced
  • 4 TBSP PEANUTS, chopped
  • JUICE FROM 1 ORANGE
  • 2 TBSP COCONUT, grated
  • 2 TBSP BROWN SUGAR
  • 1/2 TSP CINNAMON
  • 1/2 TSP NUTMEG, grated
  • 4 TBSP RUM
 
  • 2 POTATOES, cooked and mashed
  • 25 GRAM BUTTER
  • 2 TBSP FLOUR
  • 2 APPLES, peeled, cored and sliced
  • 6 TBSP SUGAR
  • ICING SUGAR

Put the bananas in a greased oven dish. Mix the peanuts, coconut, sugar, cinnamon and nutmeg and sprinkle this on the bananas. Pour the orange juice and rum on top. Bake 20 minutes at 200 degrees Celsius.

Mix the potato puree, the flour and the butter well together. Divide the dough in two parts and roll out each part to a thin circle. Put the apples and sugar on the circles, fold them and paste the edges together with a little water. Fry the cakes on low heat for 15 minutes, turn halfway. Dust with icing sugar.
