Salmon in lemon marinade

 

Potato-herring pancake

  • 600 GRAM SALMON FILLET, in large cubes
  • 10 CLOVES GARLIC, chopped
  • PIECE OF GINGERROOT, grated
  • 2 RED PEPPERS, chopped
  • 5 LEMON LEAVES
  • 1/2 CUP YOGURT
  • 1/2 LEMON, juice and rind
  • 2 TBSP BESAN FLOUR
  • 1/2 TSP GARAM MASALA
  • HANDFUL GREEN CORIANDER, chopped
 

Stir fry the besan flour with the peppers, the garlic and the garam masala for two minutes. Add the ginger, the yogurt, the lemon leaves, the lemon juice and rind and pepper and salt to taste and marinate the salmon 2 hours. Grill the salmon in a grill pan for 6 minutes. Sprinkle with coriander.

Peel the potatoes and grate them. Mix them with the remaining ingredients and pepper and salt to taste. Heat some oil in a frying pan and make small pancakes. Fry them 3 minutes on each side.
