Elderberry jam

 

Bring the milk with the vanilla sugar and the nutmeg to the boil. Add the eggs and heat slowly while stirring until the mixture thickens. Turn off the heat and add the Fladderak, stir well. Serve in wine glasses.

This is the Groningen version of eggnog. You can also use a different kind of lemon liqueur like Limoncello.

"Pierewaaien" in old Dutch means partying, and the word is probably taken over from the Russians from Archangel, when Groningen imported Russian grain; the Russian word "pirovat" means dance.

De-stem and wash the elderberries and bring them to the boil with a few tablespoons of water. Simmer 15 minutes, then puree them through a sieve. Add the sugar and the apples, bring the mixture again to the boil and simmer for ten more minutes. Put the jam in jars.
