Kick ass sauce

 

Frijolemole

  • 4 TBSP OIL
  • 1 ONION, chopped
  • 2 CLOVES GARLIC, mashed
  • 1 TBSP SUGAR
  • 2 TBSP SOY SAUCE
  • 2 TBSP VINEGAR
  • 1 CUP TOMATO PUREE
  • 1/2 TSP CORIANDER POWDER
  • 1/2 TSP CAYENNE PEPPER
  • 1/4 TSP PIMENTO POWDER
 
  • 200 GRAM CHICKPEAS, cooked
  • 1 ONION, chopped
  • 2 GREEN ONIONS, chopped
  • 2 CLOVES GARLIC, chopped
  • 1 RED PEPPER, chopped
  • 1 TOMATO, in small cubes
  • 3 TBSP CRÈME FRAÎCHE
  • 2 TBSP LEMON JUICE
  • HANDFUL PARSLEY, cut

Mix all ingredients well together.

Serve with Buffalo wings, or, if you don't eat meat, with roast vegetables.

Stir fry the onion, pepper and garlic 5 minutes. Add the chickpeas and puree this mixture. Add the remaining ingredients and salt and pepper to taste and stir well. Serve with bread.
