Eggplant with walnuts

 

Surinam string beans

  • 1 EGGPLANT, sliced thinly lengthwise
  • 2 CLOVES GARLIC, chopped
  • 50 GRAM WALNUTS, chopped
  • HANDFUL CORIANDER SEEDS
  • HANDFUL PARSLEY, chopped
  • 1 TSP PINK PEPPERS
  • 3 TBSP VINEGAR
  • 6 TBSP OLIVE OIL
 
  • 400 GRAM STRING BEANS, cut
  • PIECE OF GINGERROOT, grated
  • 1 RED PEPPER, chopped
  • 1 ONION, chopped
  • 1 TBSP SUGAR
  • PINCH OF NUTMEG, grated

Sprinkle the eggplant slices with ample salt and leave the for one hour. Rinse them and dry them well. Fry the eggplant slices two minutes on both sides in hot olive oil. Mix the walnuts with the vinegar, the peppers, the coriander seeds, the garlic and the parsley. Distribute this mixture over the eggplant slices and roll them up. Allow them to cool before serving.

Stir fry the pepper and the onion three minutes; add the string beans and stir fry three minutes more. Add the remaining ingredients and 3 tablespoons of water and simmer for 5 minutes.
