Mombasa curry

   
 
  • 600 GRAM BEEF FILLET, cut in strips
  • 2 ONIONS, chopped
  • 6 TOMATOES, cubed
  • 8 GARLIC CLOVES, chopped
  • PIECE OF GINGERROOT, grated
  • 4 CARDAMOM PODS, split open and use inside seeds
  • 1/2 TSP CORIANDER POWDER
  • 1/2 TSP CUMIN POWDER
  • 1/4 TSP CINNAMON POWDER
  • 1/2 TSP TURMERIC POWDER
   

Fry the onions and garlic for 15 minutes on low heat; add the tomatoes and ginger and cook until the tomatoes disintegrate. Add the meat and the spices and 2 cups of water; simmer for 2 hours. If the sauce is to thin, add some water; if it is too thick, cook on high heat to reduce it.
