Dhana jeera

 

Tangerine confit

  • 2 PARTS CORIANDER POWDER
  • 1 PART CUMIN POWDER
 
  • 8 SMALL TANGERINES
  • 500 GRAM SUGAR
  • LARGE GLASS JAR

Mix all spices well together. Store airtight.

Dhana in one of the Indian languages means coriander and jeera means cumin. Dhana jeera (dhanajiru powder) is mainly used in vegetarian dishes and is very popular in West India.

Bring two cups of water to the boil with the sugar and simmer for 5 minutes. Add the tangerines and simmer for one hour. Turn them halfway. Put the tangerines in a glass jar and pour the syrup on top to fill up the jar. You can cut the tangerines in small pieces and use it in cakes, cookies or sauces for instance with game or chicken.
