Stuffed omelet Java style Pork mango curry
  • 6 EGGS
  • 300 GRAM COCONUT MILK
  • 250 GRAM GROUND BEEF
  • 1 ONION, chopped
  • GINGER ROOT, grated
  • 1 TSP SAMBAL OELEK
  • 1 TSP CUMIN POWDER
  • 1 TSP CORIANDER POWDER
  • 2 CLOVES GARLIC, minced
  • 4 TBSP SOY SAUCE
  • 500 GRAM PORK, in cubes
  • 1 ONION, chopped
  • 2 MANGOES, cleaned in slices
  • 2 CLOVES GARLIC, crushed
  • 1 DRIED CHILI, chopped
  • 1 TBSP GRATED GINGERROOT
  • 1 TBSP FISH SAUCE

Mix the eggs with 100 gram coconut milk. Fry the onion with the garlic, ginger root, cumin and coriander. Add the ground beef and fry 15 minutes more. Add the rest of the coconut milk and the sambal. Bake 2 omelets out of the egg mixture, put the beef mixture on top and fold them. Mix some soy sauce with grated ginger and poor it over the omelets.

Fry the onion, the chili and the garlic for three minutes, add the pork and fry 10 minutes more. Add the ginger, the fish sauce, the mangoes and two deciliter water and simmer for 20 minutes.

Serving suggestion:
Decorate with tomatoes and serve with white rice or noodles.
