Apple muffins

 

Chocolate orange meringue

  • 100 GRAM BUTTER
  • 150 GRAM SUGAR
  • 1 EGG
  • 150 GRAM SELF RAISING FLOUR
  • 100 GRAM CORN MEAL
  • 1 CUP YOGURT
  • 4 APPLES
 
  • 4 EGG WHITES
  • 100 GRAM SUGAR
  • 100 GRAM CHOCOLATE
  • 1 ORANGE
  • 50 GRAM ALMONDS

Peel the apples and cut them in small pieces. Melt 50 gram butter, dissolve 75 gram sugar and put the apples in, fry on a low fire for 10 minutes. Divide the mixture over the bottom of 12 muffin cups. Mix all the remaining ingredients and beat for some minutes. Put in the muffin cups on top of the apple mixture. Bake 20 minutes in the oven at 160 degrees.

Grate the peel of the orange. Cut the chocolate and the almonds very tiny. Beat the egg whites with an electrical mixer for 5 minutes, than gradually add the sugar, keep mixing. With a spoon, carefully stir in the chocolate, the nuts and the orange rind. Make small heaps with a tablespoon on a sheet of baking paper. Bake in the oven for 1 1/2 hour at 100 degrees. Switch of the heat and leave the oven door closed, let the meringues sit in the oven for 12 hours.
