  • 200 GRAM SELF RAISING FLOUR
  • 80 GRAM BUTTER
  • 60 GRAM SUGAR
  • 1 TBSP GREEN ANISEED
  • 2TBSP MILK
 
  • 250 GRAM SEMOLINA
  • 1/2 TSP BAKING POWDER
  • 3/4 CUP OLIVE OIL
  • 100 GRAM DATES
  • RIND OF 1 ORANGE, grated
  • 1/2 TSP CINNAMON
Knead all ingredients well together and put the dough in the fridge for half an hour. Make a roll of the dough and cut it into slices. Put these cookies on a greased baking tray and bake them 10-15 minutes at 170 degrees Celsius.

22 February is the liturgical feast of Saint Peter, who has a chair in the St Peter's chapel in Rome. Centuries ago, in Europe agricultural laborers would change jobs on this day and drink wine and eat cookies like these with their new employers. Put the semolina together with the baking powder, 1/2 cup of olive oil and 1/2 cup of water. Knead well; add some Oil if needed. Allow the dough to rest half an hour. Puree the dates with the remaining oil, the orange rind, the cinnamon and 3 tablespoons of hot water. Divide the dough in two and roll out each piece to a rectangle. Make to rolls out of the date mixture, with the length of the dough, and put them on the dough; roll the dough up. Cut cookies and leave them for an hour. Deep fry them at 180 degrees Celsius until golden brown.
