- 1 KG SHARK (or another white fish), in small pieces
- 4 GREEN CHILLIES
- PIECE OF GINGERROOT, grated
- 3 CLOVES GARLIC, chopped
- HANDFUL SPRING ONIONS, chopped
- 1 ONION, sliced
- 2 TBSP TAMARIND PULP
- 1 TBSP SUGAR

- 400 GRAM SQUID, cleaned and cut in strips
- 2 CLOVES GARLIC, chopped
- 1 ONION, chopped
- 6 CLOVES
- 2 TBSP SOY SAUCE
- 2 TBSP LEMON JUICE
- FEW GREEN ONIONS, chopped
- 1/2 TSP NUTMEG, grated

Puree the
chillies with the ginger, the garlic and the sugar and stir fry for two
minutes. Add the fish, the tamarind and the onion, stir and simmer for 10
minutes. Stir in the spring onion.

Stir fry the onion and the
garlic three minutes. Add the quid and stir fry 2 minutes more. Add the rest
of the ingredients and heat 3 minutes. Don't cook longer, the squid will
become chewy! Sprinkle with green onions and serve with white rice.
