Mix the
sugar, the cacao and the egg yolks. Heat the milk, add the yolk mixture and
reheat slowly until it thickens but don't boil. Chop the chocolate in pieces
and dissolve in the hot milk. Add the cream and stir well. Freeze in an ice
cream machine or in the freezer (stir every hour).

Split the eggs. Mix

rind of the lemon and press the juice out. Add to the milk mixture. Beat the
egg whites until fluffy. Stir them carefully through the rest of the
ingredients. Freeze in an ice
cream machine or in the freezer (stir every hour).
