Potato salad

 

Avocado and smoked fish salad

  • 500 GRAM POTATOES, peeled, cooked and sliced
  • 1/2 CUP WHITE WINE
  • 1 CAN ANCHOVIES, cut
  • 2 TBSP OIL
  • 1 TBSP LEMON JUICE
  • 2 TBSP CAPERS
  • HANDFUL CHIVES, chopped
 
  • 200 GRAM SMOKED FISH, cubed
  • 3 TOMATOES
  • 1 AVOCADO, peeled and sliced
  • 1/4 CUCUMBER, sliced
  • 1 CHILI PEPPER , chopped
  • 1 ONION, sliced
  • 1 TSP MUSTARD SEED
  • 1 TBSP LEMON JUICE
  • HANDFUL FRESH CORIANDER, cut

Mix the oil, lemon juice, white wine, capers, chives and pepper and salt. Pour this mixture over the potatoes and put the anchovies on top.

Potato salad is an easy and delicious recipe. This my be the reason, that there are many variations. Try also Nepalese, Dominican and Finnish potato salad.

Peel and cube one tomato. Stir fry the onion and the mustard seed 5 minutes, add the fish, the chili pepper, the lemon juice and the peeled tomato and simmer for 3 minutes. Allow the fish to cool down and arrange on a plate with the remaining tomatoes (sliced), the cucumber and the avocado. Sprinkle with coriander.
