Pears à la Bressane

   
  • 4 FIRM PEARS, peeled, cored and halved
  • 50 GRAM SUGAR
  • 40 GRAM BUTTER, cubed
  • 2 CUPS CREAM
  • 4 TBSP BRANDY
  • 1 TBSP VANILLA SUGAR
  • 2 TBSP HONEY

Distribute the ice cream over 4 glasses. Pour the coffee on top and sprinkle with cinnamon, orange rind and chocolate.

Sprinkle the pear halves with brandy and butter cubes and put them in an oven dish and bake them half an hour at 200 degrees Celsius. Mix one cup of cream with honey and pour this over the pears; put them back in the oven for 10 minutes. Whip the remaining cream with the sugar and the vanilla sugar and serve this with the pears.

Bresse is a former province of France and it is actually shared nowadays between the departments Franche-Comté, Burgundy and Rhône-Alpes.
