Sicilian sesame bread

 

Bath buns

  • 300 GRAM FLOUR
  • 200 GRAM SEMOLINA
  • 2 TEASPOONS YEAST
  • 2 TEASPOONS SUGAR
  • 2 TEASPOONS SALT
  • 1 1/2 CUP WATER
  • 4 TBSP SESAME SEED
 
  • 500 GRAM FLOUR
  • 2 TEASPOONS YEAST
  • 75 GRAM SUGAR
  • 2 TEASPOONS SALT
  • 1 CUP MILK
  • 2 EGGS
  • PEEL OF 1/2 LEMON, grated
  • 50 GRAM WALNUTS, chopped
  • 50 GRAM BUTTER, melted

Mix all ingredients except the sesame seed and knead firmly for 10 minutes. Allow the dough to rise an hour. Divide the dough into three pieces and roll them out to thin strips. Roll the strips through the sesame seeds and braid them. Allow the bread to rise another hour and bake it 35 minutes at 200 degrees Celsius.

Mix flour, sugar (keep 2 tablespoons behind), salt, egg, milk, butter and yeast and knead for 10 minutes. Add lemon peel and nuts and knead one minute more. Form about 20 small balls from the dough. Sprinkle with the remaining sugar. Allow them to rise one hour more. Bake in the oven at 200 degrees for 25 minutes.
