Diplomat pudding

 

Nuns' toast

  • 100 GRAM CANDIED FRUIT
  • 75 GRAM RAISINS
  • 4 EGGS
  • 3/4 CUP MILK
  • 100 GRAM SUGAR
  • 1 TSP VANILLA SUGAR
  • 150 GRAM CAKE, in cubes
  • 2 TBSP KIRSCH
 
  • 8 SLICES WHITE BREAD
  • 2 EGGS
  • 1 CUP CREAM
  • 2 TBSP SUGAR
  • 1/2 TSP NUTMEG, grated
  • 6 SLICES FRIESIAN CLOVE CHEESE (or other cheese)
  • 50 GRAM BUTTER

Put the candied fruit on the bottom of a greased oven tin and put the cake cubes on top. Sprinkle with kirsch. Beat the eggs with the milk, the sugar and the vanilla sugar for 5 minutes and add the raisins. Pour this mixture on top. Put a baking tray filled with water in the oven at 160 degrees Celsius. Cover the pudding with aluminum foil, put it in the middle of the water and bake 45 minutes at 160 degrees Celsius.

Wikipedia gives as one of the possible backgrounds, that the pudding was first prepared in the 1908, at a diplomatic conference's diner, at the event of Bosnia's annexation.

Mix the eggs with the cream, the sugar and the nutmeg and soak the bread 10 seconds in this mixture. Fry the bread slices in the butter until golden brown. Make 2 stacks with 4 bread slices and 3 slices of cheese in between. Cut rounds with a glass or squares.
