Sweet couscous

 

Couscous with fruit

  • 200 GRAM COUSCOUS

  • ½ TSP CINNAMON

  • 50 GRAM RAISINS

  • 50 GRAM DRIED APRICOTS, cut

  • 50 GRAM WALNUTS, chopped

  • 50 GRAM SUGAR

  • 50 GRAM BUTTER

 
  • 1 CUP COUSCOUS
  • 2 ORANGES
  • 1/2 SMALL MELON, cleaned and cubed
  • 50 GRAM RAISINS
  • 50 GRAM DATES, chopped
  • 50 GRAM ALMONDS, chopped
  • 2 CUPS YOGURT
  • 4 TBSP HONEY

Steam the couscous for half an hour until it is really soft. Stir in the butter and sugar first and then the rest of the ingredients. Decorate with a walnut.

Grate the rind form 1 orange and press the juice from both. Add enough water to make one ample cup, add the peel and bring this to the boil. Pour over the couscous and let it stand for half an hour. Stir in the other ingredients.
