Wine pancakes

 

Coconut custard

  • 250 GRAM BREADCRUMBS
  • 25 GRAM BUTTER
  • 4 EGGS
  • 4 TBSP SUGAR
  • 2 CUPS OF WINE
  • ICING SUGAR
 
  • 2 CUPS COCONUT MILK
  • 1 CUP CREAM
  • 4 EGGS
  • 1 EGG YOLK
  • 100 GRAM BROWN SUGAR
  • 1/2 TSP CINNAMON POWDER
  • 1/2 TSP NUTMEG
  • 1/2 TSP GINGER POWDER

Mix the wine with the sugar, the bread crumbs and the eggs. Bake small pancakes of this mixture, three small ones in a frying pan, like American pancakes. Dust with icing sugar.

Fill a baking tray with a layer of hot water and put it in the oven; preheat at 160 degrees Celsius. Mix all the ingredients well together and pour the mixture into small oven resistant pots. Put these in the baking tray and bake the custard 40 minutes.

You can serve this dessert on Madaraka Day. This is celebrated on the 1st of June. It signifies an important step towards independence. On 1 June 1963, the country attained internal self rule.
