Xoriatiki (Greek salad)

 

Noodle prawn salad

  • GREEN LETTUCE
  • 4 TOMATOES, sliced
  • 1 CUCUMBER, sliced
  • 200 GRAM FETA, in cubes
  • GREEN ONION, chopped
  • 1 SWEET PEPPER, cut
  • 15 OLIVES, halved
  • 1 TBSP OREGANO
  • 4 TBSP OLIVE OIL
  • 2 TBSP LEMON JUICE
 
  • 400 GRAM GLASS NOODLES
  • GREEN ONIONS, chopped
  • LEMON GRASS, chopped
  • 500 GRAM PRAWNS, medium size
  • 1 CAN BABY CLAMS
  • 1 CHILI PEPPER, chopped
  • GINGER, grated
  • FRESH CORIANDER, chopped
  • 1 DECILITER LEMON JUICE
  • 2 TBSP FISH SAUCE

Arrange the lettuce on a plate and distribute the tomatoes, cucumber and sweet pepper on top. For the dressing, mix the olive oil, oregano and lemon juice well and poor over the vegetables. Put the feta cubes on top, then the green onion and as last the olives.

Cook the noodles, drain and cool. Mix with the prawns, baby clams, lemon grass and green onions. For the dressing, combine lemon juice, fish sauce, coriander, chili pepper and ginger. Poor over the salad and toss before serving. Decorate with some prawns and green onion.


Serving suggestion:
Serve with French bread and cool retsina.
