Mushrooms with green onions

 

Tomato and mango relish

 
  • 400 GRAM MUSHROOMS, cleaned
  • BUNCH OF SPRING ONIONS, chopped
  • PIECE OF GINGERROOT, sliced very thinly
  • 50 GRAM SOY SAUCE
  • 4 TBSP VINEGAR
  • 2 TBSP MIRIN (light sake)
 
  • 3 TOMATOES, in cubes
  • BUNCH OF GREEN ONIONS, chopped
  • 1 GREEN MANGO, peeled and in cubes
  • 1 TBSP SUGAR
  • 2 TBSP SOY SAUCE
  • 1 TBSP LEMON JUICE
Put the mushrooms and spring onions together in a salad bowl. Mix the soy sauce, vinegar and mirin and pour this over the mushrooms, stir carefully. Sprinkle the ginger on top. Wait half an hour before serving.

Mix the lemon juice with the soy sauce and the sugar. Stir the mango, tomato and onion together and mix with the sauce. Wait for one hour before serving the relish, so the flavors can blend.
