- 200 GRAM CABBAGE, shredded
- 2 POTATOES, peeled and in cubes
- 100 GRAM BEAN SPROUTS
- 200 GRAM PUMPKIN, in cubes
- 200 GRAM GREEN BEANS, cleaned and halved
- 50 GRAM PEANUT BUTTER
- 2 TBSP TAMARIND JUICE
- 2 TBSP GRATED COCONUT
- 1 TBSP SHRIMP PASTE (leave out if you are vegetarian or vegan)
- 1 TSP
SAMBAL OELEK
|
|
- 10 CLOVES GARLIC, peeled and sliced very tin
- 1/2 TBSP SALT
- FRYING OIL
|
Bring 1 liter water to the boil with salt to taste. Put the potatoes in, add the
cabbage after 5 minutes, add the green beans and pumpkin yet another 5 minutes
later. Cook this 5 minutes more, add the bean sprouts for one minute and drain
the water. For the dressing, stir the peanut butter together
with the tamarind juice, the coconut, the shrimp paste and the sambal and a few
tablespoons water. Put the vegetables in a bowl and pour the dressing on top.

Dry the garlic
slices with a piece of tissue. Heat a layer of 2 centimeters oil in a frying
pan to about 170 degrees and fry the garlic until golden brown. Watch
closely because they burn easily. Put them on a piece of tissue for a few
minutes and sprinkle with salt. Great side dish for all
Indonesian recipes.
