Ireland has been very poor until 1900 and in the famine of 1846/1847 it is said that more Irish died than in any war. As a result, many Irish ate potatoes as they could not afford meat. And if they did eat meat, they ate all parts of it including pork's head and legs and sheep stomach. As Ireland is and island, there is often fish on the menu and smoked fish like salmon is very popular too.
