Chocolate apricot pie

  • 200 GRAM SELF RAISING FLOUR
  • 200 GRAM BUTTER, soft
  • 200 GRAM SUGAR
  • 300 GRAM CHOCOLATE
  • 4 EGGS, split
  • 100 GRAM WALNUTS, chopped
  • 150 GRAM DRIED APRICOTS, cut
  • 150 GRAM APRICOT JAM
  • 2 TBSP OIL
 

Mix the butter with the sugar and beat for a few minutes. Add the egg yolks. Melt half of the chocolate and add this. Add the flour, the walnuts and the apricots. Whisk the egg whites until fluffy and carefully fold them into the batter. Pour this mixture in a greased baking pan and bake 45 minutes at 170 degrees Celsius. Allow the cake to cool down and slice it in two layers. Distribute the jam over the first layer and put the second layer on top. Melt the remaining chocolate with the oil and pour this over the pie.

Beat the eggs with 100 gram sugar and the vanilla sugar for 10 minutes. Carefully add the flour and stir. Pour the batter into a greased round baking pan and bake the cake 50 minutes at 160 degrees Celsius/ Allow it to cool down and slice the cake in two halves. Whip the cream with the remaining sugar. Distribute half of the cream on the bottom half of the cake; ad the cherries and after that the remaining cream. Close with the top half of the cake and dust the cake with icing sugar.
