Early summer is the time for cherries, the lightly colored cherries of June or the big black sweet juice cherries that appear a little later. These recipes all contain cherries, most fresh cherries, and some dried or sugared cherries. You can use cherries in sweet dishes like cakes and dessert, but also in savoury dishes like meat with cherry sauce. In the season you can substitute those for fresh ones, and if needed you can poach them 10 minutes in sugar syrup.
