- 150 GRAM CHOCOLATE
- 100 GRAM WALNUTS, chopped
- 2 EGG WHITES
- 50 GRAM SUGAR
- 1 TSP VANILLA SUGAR

- 50 GRAM SOFT BUTTER
- 100 GRAM BROWN SUGAR
- PIECE OF GINGERROOT, chopped
- 3 TBSP
PRESERVED GINGER, chopped
- 1/2 TSP CINNAMON
- 1/2 TSP NUTMEG
- 1/2 TSP
BISCUIT SPICES

Beat the egg whites with a
drop of vinegar or lemon juice until fluffy. Slowly beat in the sugar and
the vanilla sugar. Melt the chocolate, add the nuts and stir in the egg
whites. Make little heaps on a greased oven tray and bake the cookies 10-12
minutes at 175 degrees Celsius.

Mix all ingredients and form small balls. Put these balls on
a greased baking tray and flatten them. Bake the cookies 12 minutes at 175
degrees Celsius.

Beacon Hill is a 19th century
