Nahm prik with prawns

   
  • 50 GRAM RAW PRAWNS, peeled
  • 1/2 CUP MANGO, cleaned and diced
  • 2 CLOVES GARLIC, peeled and chopped
  • 1/4 EGGPLANT, peeled and diced
  • 1 TBSP SHRIMP PASTE
  • 3 CHILI PEPPERS
  • 1 TBSP PALM SUGAR
  • 1 TBSP TAMARIND PULP
  • 1/2 TBSP LEMON JUICE
  • 1 TBSP FISH SAUCE
   

Grill the prawns a few minutes and chop them. Stir fry the eggplant 5 minutes. Puree the eggplant with the garlic, shrimp paste, peppers, sugar, tamarind, lemon juice, fish sauce and salt to taste. Stir in the prawns and mango.

Serve as a dip with steamed eggs and raw vegetables.
