Vegetable noodles

 

Potato dice
Patate a tocchetti

  • 400 GRAM NOODLES, cooked (use rice noodles for vegan)
  • 300 GRAM CABBAGE, shredded
  • 100 GRAM FRENCH BEANS, cut
  • 1 RED SWEET PEPPER, cut
  • 1 ONION, chopped
  • 2 CLOVES GARLIC, mashed
  • 2 TBSP SOY SAUCE
 
  • 8 POTATOES, peeled and cut into small cubes
  • RIND OF ONE LEMON
  • 1 TSP FRESH MILLED PEPPER
  • 1 TSP COARSE SEA SALT
  • 2 TBSP OLIVE OIL

Stir fry the garlic, onion, pepper, beans and cabbage for 5-10 minutes. Add the noodles and the soy sauce and fry 5 minutes more. Simple and delicious.

Cook the potato cubes for 10 minutes. Stir in the rest of the ingredients, stir well. Put under a hot grill until brown (a few minutes), stir again, put again under a hot grill for a few minutes.
