The word croquette probably comes from the French word "croquer", which means "nibble". The croquette is a very successful classic food item, which was first served in the 17th century in France. There are many different croquettes, but the basic idea is a thick sauce which has cooled down to become even thicker, rolled into flour, egg white and bread crumbs and deep fried. A lot of work but delicious and much nicer that the factory made cheap version.
