In the Nepalese kitchen, you will find influences from the bordering countries Tibet and India. Many Nepalese don’t eat animals at all, but those who do, only eat male animals, mainly goats and sheep, which are slaughtered in a specific way and on specific days. Furthermore, chicken, pork and even buffalo may be on the menu. Cows are seen as holy and not eaten at all, not even if they are to old to give milk.
Most meals are served with rice, dal and some vegetables and often a form of bread like roti (chapati) or porotha. Like in Bangladesh, after meals often rolled betel leaves with nuts are served or small dishes with seeds like aniseed or fennel seeds.

I found inspiration for the recipes from my trip to Nepal and the cookbooks "the Nepal Cookbook" from the "The Association of Nepalis in the Americas" and the "Joys of Nepalese cooking" by Indra Majupuria.
