Belgian cooking looks in a number of ways like Dutch cooking, and especially recipes from Dutch Limburg, even though in later years there must have been more influence from the French. Bordering the sea, the Belgian use a lot of fish, prawns and mussels. Famous are obviously the (wrongly named) French fries, Belgian beer is well known beyond the borders as well and used in cooking. Vegetables like endives and asparagus are used in season. Apart from fish, you can eat also game, chicken, and rabbit, also the tame one, is a part of many Belgian recipes.
Special days in Belgium are the 1st of January, when waffles are served; 9 January is Lost Monday (the first Monday after Twelfth Night), and sausage rolls and apple dumplings are served; 11th July is Day of the Flemish Community, a good day for Flemish "French fries"; on 27 July, in 1830 the country became independent from The Netherlands; 27 September is the Day of the French Community and 15 November is the day of the German speaking community; and on 11 November the Dutch speaking Belgians celebrate St. Martin's Day perhaps with St. Martin's bread.
