Caprese salad
Insalata caprese

 

Chili beef salad

  • 6 TOMATOES, sliced
  • 2 BOLLS OF MOZZARELLA, sliced
  • BUNCH OF BASIL LEAVES
  • 1 TBSP CAPERS
  • OLIVE OIL
  • SALT AND FRESH MILLED PEPPER
 
  • 400 GRAM BEEF FILLET, cut in strips
  • 3 TBSP PEANUT OIL
  • 2 CLOVES GARLIC, mashed
  • 2 CHILIES, chopped
  • 2 TBSP FISH SAUCE
  • 2 TBSP LEMON JUICE
  • 200 GRAM CHINESE CABBAGE, shredded
  • 2 TOMATOES, cut
  • 1 CUCUMBER, peeled and sliced
  • 75 GRAM BEAN SPROUTS

Arrange the tomatoes, mozzarella and basil leaves as on the picture. Drizzle olive oil to taste on top and sprinkle with capers, salt and fresh milled pepper.

Insalata Caprese, "salad in the style of Capri", is super-Italian, as it represents all colors of the Italian flag. Capri is an island in the province of Naples, Campania region. A number of recipes are named after Capri like this one, for instance torta Caprese and insalata Caprese.

Fry the chilies and the garlic 3 minutes in the peanut oil. Add the beef and stir fry 4 minutes more. Add the fish sauce and the lemon juice. Add the cabbage and stir until it starts wilting. Add the other ingredients, put the salad in a bowl and toss. Serve immediately.
